Garlic Smashed Potatoes
Place 4 cups cubed peeled Yukon gold potatoes in a saucepan, cover with water. Bring to a boil; cook 6 minutes or until tender. Drain. Return potatoes to pan. Add 1/4 cup fat free vegetable (or chicken) broth, 1/4 cup reduced fat sour cream, 2 tablespoons butter, 1/2 teaspoon salt, and 3 minced garlic cloves; mash with a potato masher to desired consistency.
